How to read a listing without getting fooled

Read the liter rating as a best case rather than a promise, since stronger fizz and daily use shorten it considerably. Check what the machine is rated to carbonate: if the listing never claims anything beyond water, assume water only, no matter how appealing the photo of a fizzy cocktail looks. Next, read the bottle details carefully for the words dishwasher-safe, glass, and expiry, since all three are common surprises after purchase. Finally, separate the machine's sticker price from the shape of its running cost, and count how many different branded consumables it needs. One (gas) is normal. How much should you spend?
How much to spend depends far less on the machine than on what it commits you to afterward. Are CO2 cylinders interchangeable between soda maker brands?
Only within a connector type. Machines fall into two camps: those that take standard threaded screw-in cylinders, which accept a wide range of refills and third-party options, and those that take a proprietary quick-connect cylinder that fits only that brand's machines. A quick-connect cylinder will not physically attach to a screw-in machine or the reverse, so decide which camp you are joining before you buy, not after.
What is the difference between exchanging and refilling a cylinder?
Exchanging means handing over an empty cylinder and receiving a filled one, either at a participating store or through a mail-in program, and you pay for the gas rather than the metal. Refilling means having your own cylinder topped up, which gas and welding suppliers can often do for standard threaded cylinders. Exchange is faster and more widely available. How do I control how fizzy the water is?

Can I put the bottles in the dishwasher, and why do they expire?
Only if the bottle is explicitly labeled dishwasher-safe, and even then it usually belongs on the lower rack away from the heating element. Many carbonating bottles are hand-wash only, since heat can deform the plastic. Plastic bottles carry a printed expiry date because repeated pressure cycles gradually weaken the plastic, and an expired bottle should be retired from carbonating even though it can still hold still drinks. Glass carafes, on machines that accept them, have no expiry date as long as they stay free of cracks and chips.
Do I have to buy the brand's flavor pods or syrups?
Not with a plain water carbonator. Once the water is fizzy you can flavor it with any syrup, a splash of juice, a squeeze of citrus, or nothing at all, which keeps your running cost to gas alone. Pod-based drink systems are different by design: the flavors are the product, so you are committing to buying them alongside the gas.
